The values obtained using this method were compared with those using a standard HPLC method. A high degree of correlation between the two sets of results suggests that the method has considerable potential. The technique was subsequently applied to the characterisation of instant chicory/coffee mixtures. The authors suggest that derivative spectrophotometry could be a valuable quality control technique as it requires minimal sample preparation and is extremely rapid
